2 ripe mangoes, peeled and diced

1 cup coconut milk (full fat for creaminess)

1/2 cup granulated sugar (adjust based on sweetness preference)

1/2 cup shredded unsweetened coconut

1 tablespoon lime juice (freshly squeezed for best flavor)

1 teaspoon vanilla extract

Pinch of salt

Optional: fresh mango slices and toasted coconut for garnish

Blend the Mango: In a blender, combine the diced mangoes, coconut milk, sugar, lime juice, vanilla extract, and salt. Blend until smooth and creamy. Taste the mixture and adjust sweetness if necessary.

    Add Shredded Coconut: Pour the blended mixture into a mixing bowl and fold in the shredded coconut until evenly distributed.

      Prepare the Mold: Line an ice cube tray, silicone molds, or a parchment-lined 8x8 inch (20x20 cm) baking dish with plastic wrap or parchment paper for easy removal later.
