Ingredients
  

2 cups fresh pineapple chunks (frozen or fresh)

1 cup coconut yogurt (dairy-free if preferred)

1/2 cup coconut milk (canned or carton for creaminess)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

Pinch of sea salt

Optional: shredded coconut and pineapple chunks for garnishing

Instructions
 

In a blender, combine the pineapple chunks, coconut yogurt, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Blend on high until the mixture is completely smooth and creamy.

    Taste the mixture and adjust sweetness as desired by adding more honey or maple syrup.

      If you want a chunkier texture, stir in some additional pineapple chunks or shredded coconut after blending.

        Pour the mixture evenly into popsicle molds, leaving a small gap at the top to allow for expansion as they freeze.

          Insert popsicle sticks into the molds and place them in the freezer. Freeze for at least 4 hours or until completely solid.

            To release the pops, run warm water over the outside of the molds for a few seconds, being careful not to melt the pops themselves. Gently pull the pops out of the molds.

              If desired, roll the pops in shredded coconut or sprinkle extra pineapple chunks over them for a decoration.
