Ingredients

1 cup fresh raspberries

1/2 cup almond butter (smooth or crunchy, your choice)

2 tablespoons honey or maple syrup (for a vegan option)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup unsweetened shredded coconut (optional, for coating)

1/4 cup crushed almonds or almond slices (for garnish)

1 tablespoon coconut oil (for easier mixing, optional)

Instructions

Prepare the Raspberries: Gently rinse the raspberries under cold water and pat them dry with a paper towel. Set aside.

Make the Almond Butter Mixture: In a medium mixing bowl, combine the almond butter, honey (or maple syrup), vanilla extract, sea salt, and coconut oil (if using). Stir until the mixture is smooth and well combined.

Coat the Raspberries: Next, dip each raspberry into the almond butter mixture, making sure they are fully coated. Hold them by the stem or gently skewer them with a toothpick for easy handling.

Add Coconut (Optional): If you want to use shredded coconut, place it in a shallow dish. After dipping in the almond butter, roll the coated raspberries in the shredded coconut, making sure all sides are well covered.

Arrange the Clusters: Place each coated raspberry on a parchment-lined baking sheet. Leave some space between them as they will spread slightly.

Garnish: Once all the raspberries are coated, sprinkle crushed almonds or almond slices over the clusters for an added crunch and presentation.

Freeze: Transfer the baking sheet to the freezer and let the clusters freeze for at least 2 hours or until completely firm.

Enjoy: Once frozen, remove the clusters from the baking sheet and store them in an airtight container in the freezer. Enjoy these refreshing bites straight from the freezer as a cool treat!
