2 ripe bananas

1 cup fresh or frozen raspberries

1 cup coconut cream (chilled)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/4 cup crushed graham crackers (for topping)

Fresh mint leaves (for garnish, optional)

Instructions
 

Start by peeling the bananas and slicing them into small pieces. Place them in a blender or food processor.

    Add the raspberries, chilled coconut cream, honey (or maple syrup), and vanilla extract to the blender.

      Blend the mixture on high until smooth and creamy, stopping to scrape down the sides as needed.

        Prepare a muffin tin by placing cupcake liners inside each cup.

          Evenly distribute the raspberry banana mixture into each cupcake liner, filling them about three-quarters full.

            Sprinkle a layer of crushed graham crackers on top of each cup for added texture and flavor.

              Transfer the muffin tin to the freezer and let the cups freeze for about 4 hours or until firm.

                Once frozen, remove the cups from the muffin tin and peel away the cupcake liners.

                  Serve immediately, garnished with fresh mint leaves if desired, and enjoy your refreshing treat!
