Frozen Raspberry Lemon Yogurt Bites

2 cups Greek yogurt (plain or vanilla)

1 cup fresh raspberries (plus a few extra for garnish)

Zest of 1 lemon

Juice of 1 lemon

2-3 tablespoons honey or maple syrup (adjust based on sweetness preference)

A pinch of salt

Prepare the Mixture: In a mixing bowl, combine the Greek yogurt, lemon zest, lemon juice, honey (or maple syrup), and a pinch of salt. Stir well until the mixture is creamy and smooth. Taste and adjust sweetness if necessary.

    Add Raspberries: Gently fold in the fresh raspberries, being careful not to break them apart too much. You want to keep some whole for texture and visual appeal.

      Fill the Molds: Spoon the yogurt mixture into silicone ice cube trays or small silicone muffin molds. Fill each cavity about three-quarters full to allow for expansion when freezing.

        Freeze: Place the filled molds in the freezer for about 4-6 hours, or until fully frozen.

          Unmold and Serve: Once frozen, carefully remove the yogurt bites from the molds. You can run a little warm water over the outside of the molds to help them release more easily. Transfer the yogurt bites to a freezer-safe container for storage.

            Garnish (optional): Before serving, you can garnish each yogurt bite with a small raspberry or a sprinkle of lemon zest on top for an extra pop of color.
