Ingredients

1 cup plain Greek yogurt (full-fat or low-fat)

1/2 cup almond butter (smooth)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup rolled oats

1/2 cup almond flour

1/2 teaspoon baking powder

1/4 teaspoon cinnamon

Toppings: chopped nuts, dark chocolate chips, shredded coconut, fresh berries, or granola

Instructions

Make the Batter: In a large mixing bowl, combine the Greek yogurt, almond butter, honey (or maple syrup), vanilla extract, and salt. Mix well until the ingredients are fully incorporated and smooth.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, almond flour, baking powder, and cinnamon. Gradually add this dry mixture to the wet ingredients, stirring gently until fully combined. The batter should be thick but manageable.

Preheat the Oven: Preheat your oven to 350°F (175°C). While the oven is warming up, prepare a donut pan by lightly greasing it with non-stick spray.

Fill the Donut Pan: Spoon the batter into the donut pan, filling each ring about 3/4 of the way full. Use a spatula to smooth out the tops if necessary.

Bake: Bake the donut rings in the preheated oven for 12-15 minutes, or until they are golden brown and a toothpick inserted in the center comes out clean.

Cool: Once baked, remove the donuts from the oven and let them cool in the pan for 5 minutes. Then, transfer to a wire rack to cool completely.

Freeze Yogurt Topping: While the donuts are cooling, take the remaining Greek yogurt and mix it with a bit of honey or maple syrup to sweeten. Spread a thin layer of this yogurt on top of each cooled donut.

Freeze the Donuts: Place the yogurt-topped donuts in the freezer for at least 2 hours, or until they are completely frozen.

Top and Serve: Before serving, remove the frozen yogurt donuts from the freezer. Top with your favorite toppings such as chopped nuts, dark chocolate chips, shredded coconut, fresh berries, or a sprinkle of granola.

Enjoy: Serve the Frozen Yogurt Almond Butter Donut Rings immediately, and enjoy a delicious, healthy snack that combines creaminess with a delightful crunch!
