2 large apples (such as Granny Smith or Honeycrisp), peeled and diced

1 teaspoon cinnamon

2 tablespoons honey or maple syrup

1 cup rolled oats

1/2 cup almond flour

1/3 cup brown sugar

1/4 cup unsalted butter, melted (or coconut oil for a vegan version)

1/2 teaspoon vanilla extract

2 cups plain or flavored yogurt (Greek works great)

Optional toppings: chopped nuts, shredded coconut, or chocolate chips

Instructions
 

Prepare the Apples: In a medium bowl, combine the diced apples, cinnamon, and honey (or maple syrup). Mix well to coat all the apples evenly. Set aside to marinate for about 10 minutes.

    Make the Crumble Mixture: In another bowl, mix the rolled oats, almond flour, brown sugar, and melted butter (or coconut oil) until the mixture resembles coarse crumbs.

      Layer the Ingredients: Line a muffin tin with cupcake liners or lightly grease the cups. Spoon a layer of the apple mixture (about 1 tablespoon) into each cup, followed by a layer of the crumble mixture to evenly cover the apples.

        Add Yogurt: Spoon the yogurt on top of the crumble layer until each cup is filled to the brim. If desired, swirl in some extra honey or sprinkle additional cinnamon for enhanced flavor.

          Freeze: Place the muffin tin in the freezer and freeze for at least 4 hours or until solid.

            Serve: Once the Frozen Yogurt Apple Crumble Coins are fully frozen, remove them from the muffin tin by pulling on the cupcake liners. If they stick, run warm water over the bottom of the tin for a few seconds.
