1 ½ cups whole wheat flour

½ cup rolled oats

1 cup Greek yogurt (plain or vanilla)

½ cup honey or maple syrup

1 large egg

1 tsp vanilla extract

½ cup unsweetened almond milk

1 tbsp chia seeds

1 ½ cups fresh blueberries (you can use frozen if fresh aren't available)

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ tsp cinnamon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Combine the Wet Ingredients: In a large mixing bowl, whisk together the Greek yogurt, honey or maple syrup, egg, vanilla extract, and almond milk until smooth and well combined.

      Mix the Dry Ingredients: In a separate bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, salt, cinnamon (if using), and chia seeds. Stir until evenly mixed.

        Combine Wet and Dry Ingredients: Slowly add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix.

          Fold in the Blueberries: Gently fold in the blueberries, taking care not to crush them.

            Pour and Spread: Pour the batter into the prepared baking dish and spread it evenly.

              Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs.

                Cool Down: Allow the bars to cool in the baking dish for about 10 minutes, then lift them out using the parchment overhang to cool completely on a wire rack.

                  Slice and Store: Once cooled, slice into bars and store them in an airtight container in the refrigerator. Enjoy chilled for that refreshing frozen yogurt flavor!
