Frozen Yogurt Carrot Cake Drops

2 cups grated carrots (about 2-3 medium carrots)

1 cup plain Greek yogurt

½ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

Pinch of salt

½ cup rolled oats

½ cup finely chopped walnuts or pecans (optional)

½ cup raisins or dried cranberries (optional)

1 cup cream cheese, softened (for optional frosting)

Instructions
 

Prepare the Carrots: Start by peeling and grating the carrots finely. Use a food processor for quicker grating if available.

    Mix Ingredients: In a large mixing bowl, combine the grated carrots, Greek yogurt, honey or maple syrup, and vanilla extract. Stir well to blend the liquids into the carrot mixture.

      Add Spices and Oats: Add the ground cinnamon, nutmeg, salt, rolled oats, and nuts/raisins (if using). Mix until all ingredients are evenly incorporated. The mixture should be thick but wet.

        Form Drops: Using a tablespoon or a small cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet, spacing them about 2 inches apart. Gently press down each drop to flatten slightly.

          Freeze: Place the baking sheet into the freezer and let the drops freeze for about 2-3 hours or until solid.

            Optional Cream Cheese Frosting: If desired, beat the softened cream cheese until smooth and creamy. Refrigerate until the carrot drops are fully frozen. Once frozen, you can add a dollop of cream cheese frosting on top of each drop.

              Store: Transfer the frozen yogurt carrot cake drops into an airtight container, separating layers with parchment paper to prevent sticking. Store in the freezer until you’re ready to enjoy.

                Serve: Take out a few drops and let them sit for a couple of minutes to soften before enjoying!
