2 cups plain Greek yogurt (unsweetened)

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup fresh or dried cranberries (chopped if dried)

1 cup walnuts, chopped

1/4 teaspoon salt

1/2 cup rolled oats (for added texture)

1/2 teaspoon cinnamon (optional)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and salt. Stir until fully combined and smooth.

    Add the Mix-ins: Gently fold in the chopped cranberries, walnuts, rolled oats, and cinnamon until evenly distributed throughout the yogurt mixture.

      Line the Pan: Line an 8x8 inch (or similar) baking dish with parchment paper, leaving some overhang for easy removal later. This will make cutting the bars easier.

        Spread the Mixture: Pour the yogurt mixture into the prepared baking dish and spread it out evenly using a spatula. Tap the dish gently on the counter to remove any air bubbles.

          Freeze the Bars: Place the baking dish in the freezer and freeze for at least 4-6 hours, or until the mixture is firm and completely frozen.
