Ingredients

2 cups Greek yogurt (plain or vanilla)

1/2 cup coconut milk (canned for creaminess)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

Zest of 2 lemons

1/2 cup fresh lemon juice (about 3-4 lemons)

1 cup shredded unsweetened coconut

1 teaspoon vanilla extract

A pinch of salt

Optional toppings: toasted coconut flakes, lemon zest, or a drizzle of melted dark chocolate

Instructions

Prepare the Lemon Mixture: In a large mixing bowl, combine Greek yogurt, coconut milk, honey (or maple syrup), lemon zest, fresh lemon juice, vanilla extract, and a pinch of salt. Whisk together until smooth and creamy.

Incorporate the Coconut: Gently fold in the shredded coconut until evenly distributed throughout the mixture.

Fill the Mold: Pour the yogurt mixture into a silicone baking dish or an 8x8-inch square pan lined with parchment paper for easy removal.

Freeze: Spread the mixture evenly in the mold and smooth the top. Place it in the freezer for at least 4-6 hours, or until completely frozen.

Cut into Bars: Once fully frozen, remove from the mold (or lift out of the pan using the parchment paper). Use a sharp knife to cut the frozen block into bars of desired size.

Optional Toppings: For an extra touch, sprinkle toasted coconut flakes and lemon zest on top or drizzle with melted dark chocolate.

Serve: Let the bars sit at room temperature for about 5 minutes before enjoying, as this will make them easier to bite into.
