Ingredients

2 cups Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust sweetness to taste)

2 tablespoons matcha green tea powder

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup coconut flakes (optional, for topping)

1/4 cup chopped nuts (e.g., almonds or pistachios, for topping)

Instructions

Prep the Base: In a medium-sized mixing bowl, combine the Greek yogurt, honey (or maple syrup), matcha green tea powder, vanilla extract, and sea salt. Whisk together until smooth and well combined. Make sure there are no lumps of matcha.

Taste & Adjust: Before freezing, taste your mixture. Add more honey or syrup if you'd like it sweeter, or adjust the matcha as desired.

Prepare the Pan: Line an 8x8 inch (20x20 cm) square baking pan with parchment paper, allowing some overhang for easy removal later. This will help in cutting the squares without sticking.

Pour the Mixture: Pour your matcha yogurt mixture into the prepared baking pan, spreading it evenly with a spatula.

Add Toppings: If you’re using coconut flakes and nuts, sprinkle them evenly over the top of the yogurt mixture. This adds a nice texture and flavor contrast.

Freeze: Place the pan in the freezer and allow it to freeze for at least 4-6 hours, or until completely firm.

Cut into Squares: Once frozen solid, remove the pan from the freezer. Using the parchment paper, lift the yogurt block out of the pan. Place it on a cutting board and cut it into squares or bars of your desired size.

Serve: You can serve them immediately, or return the squares to the freezer if you plan to enjoy them later. These squares can also be stored in an airtight container in the freezer for up to 2 weeks.

Enjoy! Remove from the freezer a few minutes before serving to allow them to soften slightly for easier eating. Enjoy this refreshing and nutritious treat!
