Frozen Yogurt Strawberry Pretzel Rounds

1 cup plain Greek yogurt

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 1/2 cups fresh strawberries, hulled and diced

1 cup crushed pretzels (about 2 cups whole pretzels)

2 tablespoons melted coconut oil (or unsalted butter)

1/4 teaspoon sea salt

Optional: additional crushed pretzels for topping

Prepare the Yogurt Mixture: In a medium-sized bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until well combined. Taste and adjust sweetness if necessary.

    Add Strawberries: Gently fold in the diced strawberries into the yogurt mixture, being careful not to break them up too much. Set this mixture aside.

      Make the Pretzel Crust: In a separate bowl, combine the crushed pretzels, melted coconut oil, and sea salt. Stir until all the pretzel crumbs are well coated with the oil.

        Form the Rounds: Line a baking sheet with parchment paper. Using a tablespoon, scoop small portions of the pretzel mixture and press them flat on the parchment into round shapes, about 2 inches in diameter.

          Add Yogurt Topping: Take a spoonful of the strawberry yogurt mixture and dollop it on top of each pretzel round, spreading it slightly while leaving the edges exposed.

            Freeze: Once all rounds are assembled, place the baking sheet in the freezer for at least 4 hours or until the yogurt is completely frozen.

              Serve: Once frozen, remove the rounds from the parchment paper and serve immediately. If desired, sprinkle additional crushed pretzels on top for added crunch before serving.
