1 cup pitted Medjool dates, packed

1 cup rolled oats

1/2 cup toasted almonds, roughly chopped

1/4 cup almond butter

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup Greek yogurt (plain or flavored)

1/4 cup honey or maple syrup (adjust based on yogurt sweetness)

1/2 teaspoon ground cinnamon

1/4 cup dark chocolate chips (optional)

Instructions
 

Prepare the Base: In a food processor, combine the pitted dates, rolled oats, toasted almonds, almond butter, vanilla extract, and sea salt. Pulse until the mixture forms a sticky, crumbly dough.

    Form the Base Layer: Line an 8x8-inch baking dish with parchment paper. Press the oat and nut mixture firmly into the bottom of the dish to create an even base. Make sure it’s tightly packed to hold together once cooled.

      Make the Yogurt Layer: In a mixing bowl, combine Greek yogurt, honey (or maple syrup), and ground cinnamon. Stir until well combined and smooth. You can also add more sweetener if desired based on your taste.

        Assemble the Bars: Pour the yogurt mixture over the pressed oat base, spreading it evenly to cover the entire surface. If using, sprinkle the dark chocolate chips on top.

          Freeze: Place the dish in the freezer for at least 3-4 hours, or until the yogurt layer is completely firm.

            Cut and Serve: Once frozen, lift the bars out of the pan using the parchment paper. Allow them to sit at room temperature for a few minutes for easier slicing, then cut into squares or rectangles as desired.
