2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon pure vanilla extract

1/4 teaspoon salt

1 cup mixed berries (blueberries, raspberries, strawberries, and slices of banana)

1 tablespoon lemon juice

Fresh mint leaves for garnish (optional)

Prepare Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and salt. Whisk until smooth and creamy.

    Prepare Berries: In a separate bowl, mix the berries with lemon juice. Gently toss to coat the berries evenly.

      Form Coins: Line a baking sheet with parchment paper. Using a round cookie cutter (or simply freeform), spoon about 2 tablespoons of the yogurt mixture onto the parchment paper. Gently press the mixed berries on top of each yogurt dollop.

        Freeze: Repeat the process until all the yogurt and berries are used. Place the baking sheet in the freezer and let the yogurt coins freeze for at least 2-3 hours, or until completely solid.

          Serve: Once frozen, carefully peel the yogurt coins off the parchment paper. Arrange them on a serving platter and garnish with fresh mint leaves if desired.
