Juice of 1 lemon

2 tablespoons fresh parsley, chopped (for garnish)

1 cup jasmine rice

2 cups vegetable broth or water

1 tablespoon olive oil

1 teaspoon salt

1 cup steamed broccoli florets (optional)

½ avocado, sliced (optional)

Instructions
 

Cook the Rice:

    - In a medium saucepan, rinse the jasmine rice under cold water until the water runs clear. This removes excess starch and helps the rice cook more evenly.
