Ingredients

1 lb sirloin steak, cut into bite-sized cubes

3 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

Salt and pepper, to taste

1 lb baby potatoes, halved

2 tablespoons olive oil

1 teaspoon smoked paprika (optional)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Potatoes:

    - Preheat your oven to 425°F (220°C). In a large bowl, combine the halved baby potatoes with olive oil, salt, pepper, and smoked paprika (if using). Toss well to coat.

      Roast the Potatoes:

        - Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes or until they are golden and crisp, flipping halfway through for even cooking.

          Sear the Steak Bites:

            - While the potatoes are roasting, season the steak cubes generously with salt and pepper. In a large skillet, heat 2 tablespoons of butter over medium-high heat.

              Cook Steak Bites:

                - Once the butter has melted and is bubbling, add the steak bites in a single layer (you may need to do this in batches). Sear for about 2-3 minutes on each side until nicely browned and cooked to your desired doneness.

                  Add Flavor:

                    - Reduce heat to low and add the minced garlic, rosemary, and thyme to the skillet. Stir well and cook for another 1-2 minutes, allowing the garlic to become fragrant and ensuring the steak is coated with the herb butter. Remove from heat.

                      Combine and Serve:

                        - Once the potatoes are done roasting, remove them from the oven and toss them with the remaining tablespoon of butter. Season with additional salt and pepper if desired. Serve the garlic butter steak bites alongside the crispy potatoes, garnished with fresh parsley.

Enjoy this delightful dish bursting with flavors and perfect for any occasion!
