Ingredients

1.5 lbs flank steak, trimmed and cut into bite-sized pieces

1.5 lbs baby potatoes, halved

4 tablespoons unsalted butter, melted

6 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 teaspoons paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Optional: Fresh parsley for garnish, lemon wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Marinade: In a large bowl, combine the melted butter, minced garlic, chopped rosemary, chopped thyme, paprika, salt, and black pepper. Mix well.

Marinate the Steak: Add the bite-sized pieces of flank steak to the bowl with the marinade. Stir to coat all the pieces evenly. Allow the steak to marinate for at least 15 minutes while you prepare the potatoes.

Prepare the Potatoes: In another mixing bowl, toss the halved baby potatoes with olive oil, salt, and pepper until evenly coated.

Arrange on Sheet Pan: Line a large baking sheet with parchment paper for easy cleanup. Spread the potatoes out in a single layer on one side of the sheet pan.

Add the Steak: Use a slotted spoon to transfer the marinated steak pieces onto the other side of the sheet pan, ensuring that they are laid out evenly.

Roast Everything Together: Place the sheet pan in the preheated oven. Roast for 20-25 minutes or until the steak is cooked to your desired doneness and the potatoes are fork-tender and golden brown, tossing halfway through.

Garnish and Serve: Once done, remove the sheet pan from the oven. If desired, sprinkle fresh parsley over the steak and potatoes for a burst of color and flavor. Serve warm with lemon wedges on the side.
