Garlic Butter Steak & Sweet Potato Skillet

1 lb flank steak, sliced against the grain

2 medium sweet potatoes, peeled and diced

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Cook Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes, season with salt, pepper, and smoked paprika. Cook for about 10-12 minutes, stirring occasionally, until they are tender and slightly caramelized. Remove them from the skillet and set aside.

    Prepare Steak: In the same skillet, increase the heat to medium-high and add another tablespoon of olive oil. Season the sliced flank steak with salt, pepper, and dried thyme. Once the oil is hot, add the steak to the skillet in a single layer. Sear for 3-4 minutes on each side, depending on your desired doneness. Remove the steak from the skillet and keep it warm.

      Make Garlic Butter: In the same skillet, lower the heat to medium and add the butter. Once melted, stir in the minced garlic and cook for about 1-2 minutes until fragrant. Make sure not to burn the garlic.

        Combine Ingredients: Return the cooked sweet potatoes to the skillet, along with the steak. Toss everything together gently to coat the steak and sweet potatoes with the garlic butter. Cook for an additional 1-2 minutes to heat through.
