Garlic Herb Chicken Meatballs

For the meatballs:

1 lb ground chicken

1/4 cup breadcrumbs (regular or gluten-free)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh basil, chopped

1 teaspoon dried oregano

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

2 tablespoons olive oil (for cooking)

For the zesty dipping sauce:

1/2 cup Greek yogurt

1 tablespoon mayonnaise

1 teaspoon lemon juice

1 teaspoon Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

Chopped fresh herbs (parsley or dill) for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix the Meatball Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, chopped basil, dried oregano, onion powder, salt, black pepper, and the egg. Mix until just combined, being careful not to overmix.

      Form the Meatballs: Using your hands or a small ice cream scoop, form the mixture into meatballs, roughly 1 inch in diameter. Place them on the prepared baking sheet, spaced evenly apart.

        Cook the Meatballs: In a large skillet, heat the olive oil over medium heat. Add the meatballs in batches, browning them on all sides for about 3-4 minutes. Once browned, transfer them back to the baking sheet.

          Bake to Finish: Bake the meatballs in the preheated oven for 12-15 minutes, or until they reach an internal temperature of 165°F (74°C) and are cooked through.

            Prepare the Dipping Sauce: While the meatballs are baking, prepare the dipping sauce. In a small bowl, combine the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, and minced garlic. Mix well and season with salt and pepper to taste. Garnish with fresh chopped herbs.

              Serve: Once the meatballs are cooked, remove them from the oven and let them cool for a couple of minutes. Serve warm with the zesty dipping sauce alongside.
