Garlic Herb Rotisserie Chicken

1 whole chicken (about 4-5 lbs)

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil

1 lemon, halved

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Herb Mixture: In a small bowl, combine the minced garlic, rosemary, thyme, parsley, olive oil, smoked paprika, salt, black pepper, onion powder, and garlic powder. Mix until well blended.

      Season the Chicken: Pat the chicken dry with paper towels, then rub the herb mixture all over the chicken, making sure to get it under the skin for maximum flavor.

        Stuff the Chicken: Squeeze the juice from one half of the lemon into the chicken cavity, then place both lemon halves inside the cavity. This will keep the chicken moist and infuse it with fresh lemon flavor.

          Truss the Chicken (Optional): If desired, tie the legs together with kitchen twine and tuck the wing tips under the body to ensure even cooking.

            Roast the Chicken: Place the chicken in a roasting pan breast-side up. Insert into the preheated oven and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) when measured at the thickest part of the thigh.

              Let it Rest: Once cooked, remove the chicken from the oven and cover it loosely with foil. Let it rest for about 10-15 minutes to allow the juices to redistribute.
