Garlic Herb Shrimp with Zucchini Noodles

1 lb large shrimp, peeled and deveined

4 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 teaspoon paprika

1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Zoodles:

    Start by spiralizing the zucchinis. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips. Set the zucchini noodles aside.

      Sauté the Shrimp:

        In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.

          Season the Shrimp:

            Add the shrimp to the skillet, then sprinkle with paprika, Italian seasoning, salt, and pepper. If you like some heat, add the red pepper flakes as well. Cook the shrimp for 2-3 minutes on each side or until they turn pink and opaque.

              Combine Zoodles and Shrimp:

                Once the shrimp are cooked, reduce the heat to low and add the spiralized zucchini noodles to the skillet. Pour in the lemon juice and the remaining olive oil, tossing everything together gently. Cook just for 1-2 minutes until the zoodles are slightly softened but still al dente.

                  Serve:

                    Remove the skillet from heat. Taste and adjust seasoning if necessary. Plate the zoodle mixture and garnish with fresh parsley. If desired, sprinkle with grated Parmesan cheese for an extra touch of flavor.
