Ingredients

4 medium-sized russet potatoes

1/4 cup unsalted butter, melted

1/4 cup grated Parmesan cheese

4 cloves garlic, minced

2 tablespoons fresh thyme, chopped (or 1 tablespoon dried thyme)

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Pat them dry with a paper towel. Using a sharp knife, carefully make thin, even cuts about 1/4 inch apart across the top of each potato, slicing down to about two-thirds of the way through. Be careful not to cut all the way through—this will help them fan out beautifully during cooking.

Make the Topping Mixture: In a small bowl, combine the melted butter, minced garlic, Parmesan cheese, olive oil, thyme, salt, and black pepper. Mix well until fully blended.

Coat the Potatoes: Place the potatoes on the prepared baking sheet. Using a brush or a spoon, generously apply the garlic Parmesan mixture over each potato, making sure to get some of the mixture into the crevices.

Bake the Potatoes: Transfer the baking sheet to the preheated oven and bake for about 45-50 minutes, or until the potatoes are tender and golden brown. About halfway through the cooking time, brush the potatoes with any remaining garlic butter mixture for extra flavor.

Garnish: Once out of the oven, let the potatoes cool for a few minutes. Garnish with freshly chopped parsley for a pop of color and flavor.

Serve and Enjoy: Transfer the accordion potatoes to a serving platter. Serve hot as a delicious side dish or snack. Enjoy the delicious blend of garlic and Parmesan with every crispy, fluffy bite!
