1 lb (450g) baby carrots (or regular carrots, cut into sticks)

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, finely chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This ensures the carrots will roast perfectly crispy.

    Prepare the Carrots: If you're using regular carrots, peel them and slice them into sticks about 4-5 inches long. Baby carrots can be used whole.

      Mix the Seasoning: In a large bowl, combine the olive oil, minced garlic, salt, black pepper, and smoked paprika. Whisk together until well combined.

        Coat the Carrots: Add the carrots to the bowl and toss them in the oil and seasoning mix until they're evenly coated.

          Arrange on Baking Sheet: Lay the coated carrots in a single layer on a baking sheet lined with parchment paper. This helps them crisp up nicely without sticking.
