Ingredients

4 large russet potatoes

1/4 cup olive oil

4 cloves garlic, minced

1 cup grated Parmesan cheese

1 tablespoon dried oregano

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Optional: extra Parmesan for sprinkling

Instructions

Preheat the oven: Preheat your oven to 425°F (220°C).

Prepare the potatoes: Wash and scrub the russet potatoes thoroughly. Cut each potato into wedges (about 8 wedges per potato) by slicing them in half lengthwise, and then cutting each half into 4 evenly sized wedges.

Season the potatoes: In a large mixing bowl, whisk together the olive oil, minced garlic, dried oregano, paprika, salt, and black pepper. Add the potato wedges to the bowl and toss until they are well coated with the olive oil and seasoning mixture.

Add Parmesan cheese: Sprinkle the grated Parmesan cheese over the coated wedges and toss again gently to ensure the cheese adheres to the potatoes.

Arrange on a baking sheet: Line a baking sheet with parchment paper. Spread the potato wedges in a single layer on the baking sheet, ensuring they are not overcrowded for optimal crispiness.

Bake: Place the baking sheet in the oven and bake for about 30-35 minutes. Flip the wedges halfway through to ensure even browning. Bake until the wedges are golden brown and crispy, and a fork can easily pierce through the potato.

Garnish and serve: Remove the baking sheet from the oven and allow the wedges to cool for a couple of minutes. Optionally, sprinkle with extra Parmesan cheese and garnish with fresh chopped parsley before serving.

Enjoy: Serve warm as a delicious side dish or snack, perfect with a dipping sauce of your choice!
