4 medium green tomatoes, sliced 1/4 inch thick

1 cup all-purpose flour

1 cup cornmeal

1 tsp garlic powder

1 tsp paprika

1/2 tsp cayenne pepper (optional for extra heat)

Salt and black pepper to taste

2 large eggs, beaten

1/2 cup buttermilk

Vegetable oil, for frying

4 slices of your choice of bread (sourdough or ciabatta work great)

4 slices of sharp cheddar cheese or your favorite cheese

Fresh arugula, for topping

Optional: Hot sauce or remoulade for serving

Prepare the Tomatoes: Start by laying the sliced green tomatoes on paper towels. Sprinkle a little salt on both sides and let them sit for about 15-20 minutes to draw out some moisture. Pat them dry with additional paper towels.

    Set Up Breading Station: In one shallow bowl, place the all-purpose flour. In another bowl, mix the cornmeal, garlic powder, paprika, cayenne pepper (if using), and a pinch of salt and black pepper. In the third bowl, whisk the eggs and buttermilk together until well combined.

      Bread the Tomatoes: Dredge each tomato slice first in the flour, shaking off any excess. Next, dip it into the egg mixture, coating well. Finally, coat the slice in the cornmeal mixture, pressing gently to ensure it adheres. Repeat with all tomato slices.

        Heat the Oil: In a large skillet, add about 1/2 inch of vegetable oil and heat over medium-high heat until it shimmers (about 350°F or 175°C).

          Fry the Tomatoes: Carefully place the breaded tomato slices into the hot oil, cooking them in batches to avoid overcrowding. Fry for about 2–3 minutes on each side, or until they are golden brown and crispy. Use a slotted spatula to transfer the fried tomatoes to a paper towel-lined plate to drain any excess oil.

            Assemble the Sandwiches: Toast the slices of bread in the skillet or a toaster until golden brown. On one slice of bread, place a piece of fried green tomato, followed by a slice of cheese, and a handful of fresh arugula. Top with another slice of bread.

              Serve: Slice the sandwiches in half and serve warm. You may drizzle with hot sauce or dollop some remoulade on the side for an extra kick!
