2 pounds fresh ripe figs, stems removed and quartered

1 cup granulated sugar

1/2 cup freshly squeezed lemon juice (about 3-4 lemons)

1/4 cup water

1 teaspoon vanilla extract (optional for a richer flavor)

1/2 teaspoon ground cinnamon (optional for warmth)

1/4 teaspoon salt

Prepare the Figs: Rinse the figs under cold water and remove the stems. Quarter the figs into smaller pieces, leaving some larger chunks for texture.

    Combine Ingredients: In a large heavy-bottomed pot, mix the quartered figs, granulated sugar, lemon juice, water, and salt. If using, add the vanilla extract and ground cinnamon at this stage. Stir well to combine.

      Cook the Mixture: Place the pot over medium heat and cook the mixture, stirring frequently until the sugar dissolves completely. Once the mixture starts to boil, reduce the heat to medium-low.

        Simmer: Allow the fig mixture to simmer gently for about 30-40 minutes. Stir occasionally to prevent sticking and ensure even cooking. You'll know it’s ready when the mixture has thickened and coats the back of a spoon.

          Check the Consistency: To test the jam's consistency, place a spoonful on a cold plate. Let it sit for a minute, then push it with your finger; if it holds its shape and doesn't run, it's ready. If it’s too runny, continue cooking for an additional 5–10 minutes.

            Jar the Jam: Once the jam reaches the desired consistency, carefully pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars with a clean cloth to ensure a good seal.

              Seal and Cool: Place sterilized lids on the jars and screw on the metal bands until they're fingertip-tight. Let the jars cool at room temperature for about an hour before transferring to the refrigerator.
