Ingredients

1 cup Arborio rice (or any short-grain rice)

6 cups low-sodium vegetable broth (or chicken broth)

3 large eggs

½ cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

1 medium onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried oregano

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until softened. Add the minced garlic and cook for another 1-2 minutes, until fragrant.

Cook the Rice: Add the Arborio rice to the pot, stirring well to coat the grains with the oil and aromatics. Cook for an additional 2-3 minutes, allowing the rice to toast slightly.

Add Broth & Seasoning: Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low and add the dried oregano, salt, and pepper. Cover and simmer for 15-20 minutes, or until the rice is tender and has absorbed some broth.

Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, lemon juice, and lemon zest until well combined. This mixture will provide creaminess and tanginess to the soup.

Temper the Eggs: To prevent the eggs from curdling, slowly add a ladleful of the hot broth from the soup into the egg mixture while whisking continuously. Repeat this step a couple of times until the egg mixture is warmed.

Combine Mixtures: Gradually stir the tempered egg mixture back into the pot of soup, mixing well to incorporate all ingredients. Heat the soup gently over low heat for another 2-3 minutes, ensuring it doesn't boil. Taste and adjust the seasoning with extra salt and pepper as needed.

Serve: Ladle the warm soup into bowls, garnish with fresh parsley, and serve with lemon wedges on the side for an extra burst of flavor. Enjoy your delightful dish!
