Greek Yogurt Banana Oatmeal Muffins

1 cup rolled oats

1 cup mashed ripe bananas (about 2 large bananas)

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1/4 cup coconut oil or unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

Pinch of salt

Optional: 1/2 cup chocolate chips or chopped nuts (walnuts or pecans)

Instructions
 

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

    In a large mixing bowl, combine the mashed bananas, Greek yogurt, honey (or maple syrup), melted coconut oil (or butter), eggs, and vanilla extract. Whisk until the mixture is smooth and well combined.

      In another bowl, whisk together the rolled oats, baking powder, baking soda, ground cinnamon, and salt.

        Slowly add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. If using, fold in the chocolate chips or nuts at this stage.

          Spoon the batter into the prepared muffin tin, filling each muffin cup about 2/3 full.

            Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
