Ingredients

2 cups Greek yogurt (plain or flavored)

1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

Optional: fresh mint leaves for garnish

Instructions

Prepare the Berries: If using whole strawberries, hull and slice them into smaller pieces. You can leave raspberries and blueberries whole.

Mix the Yogurt: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well blended and creamy. Taste and adjust sweetness if necessary.

Layer the Pops: Grab your popsicle molds and begin layering. Start with a spoonful of the yogurt mixture at the bottom of each mold, followed by a layer of mixed berries. Repeat the process, alternating between yogurt and berries until the molds are nearly full.

Insert Sticks: Once filled, insert popsicle sticks into each mold. If you don't have popsicle sticks, you can cover the molds with a piece of foil and poke the sticks through the foil.

Freeze: Place the molds in the freezer for at least 4-6 hours, or until the popsicles are completely frozen solid.

Unmold and Serve: To easily remove the popsicles from the molds, run them under warm water for a few seconds. Carefully pull out the pops and serve immediately. If desired, garnish with fresh mint leaves for an extra touch.

Enjoy: These pops are perfect for hot days, packed with protein, and naturally sweetened for a guilt-free treat!
