Ingredients

2 cups cooked chicken, shredded

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/4 cup green chilies, diced (mild or hot based on preference)

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cumin

Salt and pepper to taste

1 can (16.3 oz) refrigerated biscuit dough (8 count)

1 egg, beaten (for egg wash)

1 tablespoon olive oil (for drizzling)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Prepare the Filling: In a mixing bowl, combine the shredded chicken, sharp cheddar cheese, cream cheese, diced green chilies, chopped green onions, garlic powder, onion powder, cumin, salt, and pepper. Mix well until all ingredients are fully incorporated.

Roll Out the Biscuits: Open the biscuit can and separate the biscuits. On a lightly floured surface, flatten each biscuit into a wider disc about 4 inches in diameter.

Add the Filling: Place a generous tablespoon of the chicken mixture in the center of each biscuit disc. Be careful not to overfill to prevent spilling.

Seal the Biscuit Bites: Fold the biscuit over the filling, pinching the edges to seal them tight. Place them seam-side down on the prepared baking sheet.

Brush with Egg Wash: Brush the tops of the sealed biscuit bites with the beaten egg. This will give them a nice golden color when baked.

Drizzle with Olive Oil: Lightly drizzle olive oil over the bites for added flavor and a crispy finish.

Bake: Place the baking sheet in the preheated oven and bake for 15 to 20 minutes or until the biscuits are golden brown and fluffy.

Cool and Serve: Let the bites cool slightly before serving. These are great as an appetizer, snack, or even a main dish paired with a side salad!
