Grilled BBQ Chicken Flatbread

2 cups grilled chicken breast, shredded

1 cup BBQ sauce (your favorite brand)

4 pieces of flatbread (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn kernels (fresh, frozen, or canned)

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for heat)

1 cup fresh cilantro, chopped

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Prep the Chicken: In a medium bowl, mix the shredded chicken with 3/4 cup of BBQ sauce, smoked paprika, garlic powder, salt, and pepper. Ensure the chicken is well coated.

    Prepare the Flatbreads: Preheat your grill or grill pan over medium heat. Lightly brush both sides of the flatbread with olive oil to prevent sticking.

      Grill the Flatbreads: Place the flatbreads directly on the grill. Grill for about 2-3 minutes on each side, until they are lightly charred and slightly crispy. Remove from the grill and set aside.

        Assemble the Flatbreads: Spread a thin layer of remaining BBQ sauce on each flatbread. Top with the BBQ chicken mixture, followed by an even distribution of shredded mozzarella, red onion slices, and corn kernels.

          Return to Grill: Place the assembled flatbreads back on the grill. Close the lid and cook for an additional 5-7 minutes, or until the cheese is melted and bubbly.

            Garnish and Serve: Remove the flatbreads from the grill. Sprinkle the tops with fresh chopped cilantro. Slice into wedges and serve immediately with extra BBQ sauce on the side for dipping.
