½ cup BBQ sauce (store-bought or homemade)

1 tablespoon olive oil

4 whole grain sandwich rolls

1 cup coleslaw mix (cabbage, carrots)

¼ cup vegan mayo

1 tablespoon apple cider vinegar

Salt and pepper to taste

1 teaspoon smoked paprika (optional)

Fresh cilantro or parsley (for garnish)

Prepare the Tofu: Drain the tofu and wrap it in a clean towel. Place a heavy object (like a cast-iron skillet) on top for about 20-30 minutes to press out excess moisture. This helps achieve a firmer texture and better flavor absorption.

    Slice and Marinate: Once pressed, slice the tofu into ½-inch thick slabs. In a bowl, combine the BBQ sauce with the smoked paprika (if using), and then coat the tofu slices with the marinade. Let it sit for at least 15 minutes for the flavors to infuse.

      Grill the Tofu: Preheat your grill or grill pan over medium-high heat. Brush with olive oil to prevent sticking. Once hot, add the marinated tofu slices and grill for about 4-5 minutes on each side, or until they have nice grill marks and are heated through.
