2 tablespoons olive oil

2 tablespoons lime juice

1 tablespoon honey

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

1 cup brown rice, uncooked

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, sliced

1 cup cherry tomatoes, halved

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Marinate the Chicken: In a mixing bowl, combine olive oil, lime juice, honey, smoked paprika, garlic powder, cumin, salt, and pepper. Add the chicken breasts, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours for enhanced flavor.

    Cook the Rice: In a medium saucepan, bring 2 cups of water to a boil. Add the brown rice, reduce to low heat, cover, and simmer for about 45 minutes, or until tender and fluffy. Remove from heat and let stand, covered, for 5 minutes before fluffing with a fork.

      Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated chicken breasts. Grill for about 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (74°C) and is charred with grill marks. Remove from the grill and let it rest for 5 minutes before slicing.

        Prepare the Vegetables: In a large bowl, combine the black beans, corn, diced red bell pepper, and halved cherry tomatoes. Toss gently and season with a pinch of salt and pepper.
