Grilled Chicken Caprese Sandwich

Ingredients
  

2 boneless, skinless chicken breasts

1 cup fresh mozzarella cheese, sliced

1 large tomato, sliced

1/2 cup fresh basil leaves

1/4 cup balsamic glaze

4 ciabatta rolls (or your favorite sandwich bread)

2 tablespoons olive oil

Salt and pepper, to taste

Optional: Fresh arugula for an added peppery crunch

Marinate the Chicken: In a bowl, combine 2 tablespoons of olive oil, salt, and pepper. Coat the chicken breasts in the marinade and allow to sit for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor).

    Preheat the Grill: Preheat your grill or grill pan to medium-high heat.

      Grill the Chicken: Place the marinated chicken on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred. Remove from the grill and let it rest for 5 minutes.

        Prepare the Ciabatta Rolls: While the chicken is resting, cut the ciabatta rolls in half and lightly toast them on the grill for a couple of minutes until golden brown.

          Assemble the Sandwich: Place a grilled chicken breast on the bottom half of each ciabatta roll. Layer with fresh mozzarella slices, tomato slices, and basil leaves. Drizzle with balsamic glaze.

            Optional Arugula: For an extra layer of flavor, add a handful of fresh arugula on top before closing the sandwich.

              Finish and Serve: Place the top half of the ciabatta roll over the assembled ingredients. Press down gently and slice the sandwich in half for easier handling. Serve immediately while the sandwiches are warm, with extra balsamic glaze on the side if desired.
