2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 ripe mango, diced

1/2 red onion, finely chopped

1/2 red bell pepper, diced

1 jalapeño, seeded and minced (optional for extra heat)

Juice of 1 lime

1/4 cup fresh cilantro, chopped

4 large whole wheat tortillas

1 cup shredded lettuce

1/2 cup crumbled feta cheese (optional)

Instructions
 

Prepare the Chicken: In a small bowl, mix the olive oil, paprika, garlic powder, salt, and pepper. Rub this spice mixture evenly over the chicken breasts.

    Grill the Chicken: Preheat the grill to medium-high heat. Cook the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the juices run clear. Remove from the grill and let it rest for a few minutes before slicing.

      Make the Mango Salsa: In a medium bowl, combine the diced mango, red onion, bell pepper, jalapeño, lime juice, and cilantro. Mix well and season with salt to taste. Set aside.

        Assemble the Wraps: Lay a tortilla flat on a clean surface. Place a portion of shredded lettuce in the center, followed by sliced grilled chicken and a generous scoop of mango salsa. Sprinkle with crumbled feta cheese if using.

          Wrap It Up: Fold in the sides of the tortilla and then roll from the bottom up to secure the filling. Repeat with the remaining tortillas.

            Serve: Cut the wraps in half diagonally and serve with extra lime wedges on the side.
