Grilled Chicken & Mango Salsa Wraps

For the Grilled Chicken:

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1/2 red bell pepper, diced

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For Assembly:

4 large tortillas (flour or spinach)

1 cup mixed greens (spinach, arugula, or lettuce)

Optional: sour cream or Greek yogurt for additional creaminess

Marinate the Chicken: In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, lime juice, salt, and pepper. Add the chicken breasts, ensuring they're well coated. Let marinate for at least 30 minutes (or up to 2 hours in the refrigerator for optimal flavor).

    Prepare the Mango Salsa: In another bowl, mix the diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt. Taste and adjust seasoning as necessary. Set aside to let the flavors meld while you cook the chicken.

      Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated chicken breasts. Grill for about 6-7 minutes on each side or until fully cooked (internal temperature of 165°F/75°C). Remove from the heat and let the chicken rest for a few minutes before slicing into strips.
