Grilled Chicken & Peach Salad

Ingredients
  

2 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

4 cups mixed greens (spinach, arugula, or spring mix)

1/4 cup feta cheese, crumbled

1/4 cup pecans, toasted

1/4 red onion, thinly sliced

1 tablespoon olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Optional: Fresh basil leaves for garnish

Prepare the Chicken: Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Let it marinate for at least 15 minutes while you prep the rest of the ingredients.

    Grill the Chicken: Preheat the grill to medium-high heat. Grill the chicken breasts for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C). Remove from the grill and allow to rest for 5 minutes before slicing.

      Toast the Pecans: In a small skillet over medium heat, toast the pecans for 3-5 minutes until golden and fragrant, stirring frequently to avoid burning. Set aside.

        Prepare the Dressing: In a small bowl, whisk together the olive oil and balsamic vinegar with a pinch of salt and pepper. Adjust the seasoning to your taste.

          Assemble the Salad: In a large bowl, mix the mixed greens, sliced peaches, sliced red onion, and crumbled feta cheese. Pour the dressing over the salad and toss gently to combine.
