One of the key secrets to achieving the perfect grilled chicken is the art of marinating. Marinating chicken thighs not only infuses them with vibrant flavors but also enhances their natural juiciness and tenderness. The marinade acts as a flavor booster, allowing the herbs and spices to penetrate the meat deeply. For our Zesty Herb-Grilled Chicken Thighs, the marinade features a delightful combination of fresh herbs, citrus, and savory elements that harmonize beautifully.

Ingredients

4 bone-in, skin-on chicken thighs

3 tablespoons olive oil

2 tablespoons fresh lemon juice

4 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh herbs (such as parsley or cilantro) for garnish

Instructions

Prepare the Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, Dijon mustard, honey, smoked paprika, oregano, thyme, salt, and pepper until well combined.

Marinate the Chicken: Add the chicken thighs to the bowl, ensuring they are well coated in the marinade. Cover with plastic wrap and refrigerate for at least 1 hour, preferably overnight for best flavor.

Preheat the Grill: Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

Grill the Chicken: Remove the chicken thighs from the marinade and shake off any excess. Place them skin-side down on the grill. Cook for 7-8 minutes before flipping, ensuring a nice sear.

Cook Through: Flip the chicken and grill for another 7-10 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and golden brown.

Rest: Once cooked, remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute.

Garnish and Serve: Garnish with freshly chopped herbs before serving. This dish pairs wonderfully with grilled vegetables or a light salad.
