Grilled Chicken with Avocado Corn Salsa

For the Chicken:

4 boneless, skinless chicken breasts

1/4 cup olive oil

2 tablespoons lime juice

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

For the Avocado Corn Salsa:

2 ripe avocados, diced

1 cup fresh corn kernels (or 1 cup canned corn, drained)

1 medium red onion, finely diced

1 cup cherry tomatoes, halved

1/4 cup cilantro, chopped

2 tablespoons lime juice

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: 1 diced jalapeño for extra heat

Instructions
 

Marinate the Chicken: In a medium bowl, mix together olive oil, lime juice, minced garlic, cumin, smoked paprika, salt, and pepper. Add the chicken breasts to the bowl, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours.

    Prepare the Salsa: In a separate bowl, combine diced avocados, corn, red onion, halved cherry tomatoes, and chopped cilantro. Drizzle with lime juice, and season with salt and pepper. If desired, stir in diced jalapeño for added spice. Gently toss to combine and set aside.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). Lightly oil the grill grates to prevent sticking.

        Grill the Chicken: Remove the chicken from the marinade and discard the remaining marinade. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F and the chicken has nice grill marks.

          Rest Chicken: Once grilled, transfer the chicken to a plate, cover loosely with foil, and allow to rest for 5 minutes.
