Grilled Corn & Black Bean Salad

4 ears of fresh corn, husked

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, diced

1 small red onion, finely chopped

1/2 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 avocado, diced

1 lime, juiced

2 tablespoons olive oil

1 teaspoon ground cumin

Salt and pepper to taste

1/4 teaspoon cayenne pepper (optional)

Instructions
 

Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill grates, turning occasionally, and grill for about 10-12 minutes or until kernels are charred and tender. Once done, let them cool slightly before cutting the kernels off the cob.

    Prepare the Salad Base: In a large mixing bowl, combine the black beans, diced red bell pepper, chopped red onion, cherry tomatoes, and chopped cilantro.

      Add the Grilled Corn: Once the corn has cooled enough to handle, carefully cut the kernels off the cob and add them to the mixing bowl with the other ingredients.

        Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, pepper, and cayenne pepper (if using) until well combined.

          Combine: Pour the dressing over the salad base and gently toss everything together until the ingredients are well coated in the dressing.

            Add Avocado: Just before serving, gently fold in the diced avocado to avoid mashing it.

              Serve: You can serve the salad immediately, or let it sit for about 15-20 minutes to allow the flavors to meld together. It can be served chilled or at room temperature.
