Ingredients

4 ears of fresh corn, husked

4 tablespoons unsalted butter, softened

2 cloves garlic, minced

1/4 cup grated Parmesan cheese

1 tablespoon fresh parsley, finely chopped (optional)

1/2 teaspoon smoked paprika

Salt and black pepper to taste

Olive oil for brushing

Instructions

Prepare the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, let the coals burn until they are covered with white ash.

Make the Garlic Parmesan Butter: In a medium bowl, combine softened butter, minced garlic, grated Parmesan cheese, smoked paprika, salt, and black pepper. Mix until well incorporated. If desired, stir in the chopped parsley for added freshness.

Prep the Corn: Husk the corn, removing all silk, and rinse under cool water. Pat dry with a kitchen towel.

Grill the Corn: Brush each corn ear lightly with olive oil to prevent sticking. Place the corn directly on the grill grates and cook for 10-15 minutes, turning occasionally, until the kernels are tender and lightly charred.

Coat with Garlic Butter: Once the corn is done, remove it from the grill and immediately brush the warm ears with the garlic Parmesan butter. Make sure to get in all the nooks and crannies!

Serve: Sprinkle any remaining Parmesan cheese on top. Serve immediately with extra lemon wedges for a zesty kick if desired. Enjoy your deliciously grilled corn!
