Ingredients

8 slices of sourdough bread

1 cup fig jam (store-bought or homemade)

8 oz creamy goat cheese, softened

4 oz sharp cheddar cheese, shredded

4 oz prosciutto, thinly sliced

4 tbsp unsalted butter, softened

Fresh arugula or spinach (for garnish, optional)

1 tbsp balsamic glaze (for drizzling, optional)

Instructions

Prepare the Bread: Start by spreading a thin layer of butter on one side of each slice of sourdough bread.

Assemble the Sandwiches: On the unbuttered side of four slices, spread a generous layer of fig jam. Layer the softened goat cheese on top of the fig jam, followed by a few slices of prosciutto, and then sprinkle with shredded cheddar cheese.

Top and Close: Place the remaining slices of bread butter-side up on top of the assembled sandwiches to create a grilled cheese effect.

Heat the Grill: Preheat a non-stick skillet or griddle over medium heat.

Grill the Sandwiches: Once hot, carefully place the assembled sandwiches on the skillet. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheeses are melty.

Serve: Once grilled to perfection, remove the sandwiches from the skillet. Let them rest for a minute before cutting them in half. Optionally, garnish with fresh arugula or spinach and a drizzle of balsamic glaze for an added burst of flavor.

Enjoy: Serve warm and indulge in the delightful sweet and savory combination of fig, cheese, and prosciutto!
