Ingredients

For the Grilled Greek Chicken:

4 boneless, skinless chicken breasts

1/4 cup olive oil

Juice of 1 large lemon

3 cloves garlic, minced

2 teaspoons dried oregano

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

For the Whipped Feta:

8 oz feta cheese, crumbled

1/4 cup cream cheese, softened

1/4 cup Greek yogurt

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon dried oregano

Pinch of red pepper flakes (optional, for heat)

Salt and black pepper to taste

To Serve:

Fresh vegetables (such as cherry tomatoes, cucumber, and red onion)

Pita bread or grilled flatbreads

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper. Add the chicken breasts to the bowl, ensuring they are well coated. Cover with plastic wrap and let marinate in the fridge for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Whipped Feta: In a food processor, combine crumbled feta, cream cheese, Greek yogurt, olive oil, lemon juice, dried oregano, and red pepper flakes, if using. Blend until smooth and creamy, scraping down the sides as needed. Season with salt and black pepper to taste. Transfer to a small serving bowl and set aside.

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If using charcoal, ensure the coals are glowing and covered in ash.

Grill the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Place the chicken breasts on the grill. Cook for 6-7 minutes on one side, flip, and continue cooking for another 5-7 minutes, or until the internal temperature reaches 165°F and the juices run clear. Remove from the grill and allow to rest for a few minutes.

Serve: Slice the grilled chicken and serve on a platter with the whipped feta in the center. Garnish with chopped fresh parsley. Accompany with fresh vegetables and pita or flatbreads for a complete meal.
