Grilled Peach & Arugula Salad

Ingredients
  

3 ripe peaches, halved and pitted

4 cups fresh arugula

½ cup crumbled goat cheese

¼ cup candied pecans (or walnuts)

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and freshly ground black pepper, to taste

Fresh mint leaves, for garnish (optional)

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium heat on the stovetop.

    Prepare the Peaches: Brush the peach halves lightly with olive oil to prevent sticking to the grill.

      Grill the Peaches: Place the peaches cut-side down on the grill. Grill for about 4-5 minutes until they have nice grill marks and are softened. Flip them over and grill for an additional 2-3 minutes. Remove from the grill and let them cool slightly.

        Make the Dressing: In a small bowl, whisk together the remaining olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

          Toss the Arugula: In a large bowl, add the arugula and drizzle about half of the dressing over it. Toss gently to coat the leaves.

            Assemble the Salad: On a serving platter, arrange the dressed arugula. Slice the grilled peaches and place them over the arugula. Sprinkle the crumbled goat cheese and candied pecans on top.

              Finish with Dressing: Drizzle the remaining dressing over the salad and season with additional salt and pepper if desired.

                Garnish: Optionally, tear a few fresh mint leaves and scatter them over the salad for a burst of freshness.

                  Serve: Enjoy your Grilled Peach & Arugula Salad immediately, while the peaches are still warm!
