1 ripe pineapple, peeled, cored, and cut into 1/2-inch thick slices

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon melted coconut oil (or vegetable oil)

Pinch of sea salt

Optional garnish: fresh mint leaves, and vanilla ice cream for serving

Prepare the Pineapple: Start by cutting the pineapple into thick slices. Make sure to remove the core from each slice to ensure they grill evenly.

    Make the Flavor Mix: In a small bowl, combine the brown sugar and ground cinnamon. Mix well so that the sugar is evenly coated with cinnamon.

      Coat Pineapple: Brush each side of the pineapple slices with melted coconut oil. This will help them grill beautifully and prevent sticking.
