Grilled Pineapple Teriyaki Burgers

1 lb ground beef or turkey

1/2 cup breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce

1/4 cup teriyaki sauce, plus extra for glazing

1 teaspoon sesame oil

Salt and pepper, to taste

4 slices fresh pineapple

4 burger buns (preferably brioche or whole grain)

4 slices Swiss or provolone cheese (optional)

Lettuce leaves, for serving

Sliced tomatoes, for serving

Sesame seeds, for garnish

Instructions
 

Prepare the Patties: In a large mixing bowl, combine the ground meat, breadcrumbs, green onions, minced garlic, minced ginger, soy sauce, teriyaki sauce, sesame oil, salt, and pepper. Mix until just combined; do not overwork the meat. Form the mixture into 4 equally sized patties.

    Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it on the stovetop over medium-high heat and lightly grease it with cooking spray.

      Grill the Pineapple: Brush the pineapple slices with a little teriyaki sauce. Place them on the grill and cook for about 3-4 minutes on each side until grill marks appear and they caramelize slightly. Remove from the grill and set aside.

        Grill the Patties: Place the burger patties on the grill. Cook for about 4-5 minutes on one side, then flip. If using cheese, add a slice on top of each patty after flipping. Cook for another 4-5 minutes or until they reach your desired doneness (160°F for beef, 165°F for turkey).

          Toast the Buns: During the last few minutes of cooking, put the burger buns on the grill cut side down for about 1-2 minutes until lightly toasted.

            Assemble the Burgers: Spread a little extra teriyaki sauce on the bottom half of each toasted bun. Place the patty on top, followed by a grilled pineapple slice, a lettuce leaf, and sliced tomatoes. Top with the other half of the bun.

              Garnish and Serve: Sprinkle sesame seeds on the top of the buns if desired. Serve immediately with your favorite sides.
