Grilled Romaine with Lemon Caesar Dressing

Ingredients
  

2 heads of romaine lettuce

2 tablespoons olive oil

Salt and pepper to taste

½ cup grated Parmesan cheese

1 cup croutons (store-bought or homemade)

Lemon wedges for garnish

For the Lemon Caesar Dressing:

1 clove garlic, minced

2 tablespoons lemon juice (freshly squeezed)

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1 egg yolk (or 1 tablespoon mayo for egg-free)

½ cup olive oil

Salt and freshly ground black pepper to taste

Instructions
 

Prepare the Dressing:

    In a medium bowl, whisk together minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, and egg yolk until well combined. Gradually whisk in olive oil until the dressing is emulsified. Season with salt and pepper to taste. Set aside.

      Prep the Romaine:

        Preheat the grill to medium heat. Rinse the romaine heads under cold water and cut each head in half lengthwise. Pat them dry gently with a paper towel.

          Season the Lettuce:

            Brush the cut sides of each romaine half with olive oil and sprinkle generously with salt and pepper.

              Grill the Romaine:

                Place the romaine halves cut-side down on the preheated grill. Grill for about 3-5 minutes until charred and slightly wilted. Carefully flip and grill for another 2-3 minutes, just until the edges are tender but still crisp.

                  Assemble the Dish:

                    Remove the grilled romaine from the grill and allow it to cool slightly. Drizzle the Lemon Caesar dressing generously over each half. Sprinkle with grated Parmesan cheese and add croutons to each dish.

                      Serve:

                        Serve the grilled romaine with lemon wedges on the side. Drizzle any remaining dressing over the top for an extra kick.
