1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

2 tablespoons lime juice (freshly squeezed)

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh cilantro, chopped

For the Slaw:

2 cups green cabbage, shredded

1 cup red cabbage, shredded

1 medium carrot, grated

1/4 cup fresh cilantro, chopped

1/2 cup Greek yogurt (or sour cream)

2 tablespoons lime juice

1 tablespoon honey

Salt and pepper to taste

For the Tacos:

8 small corn or flour tortillas

Lime wedges for serving

Extra fresh cilantro for garnish

Instructions
 

Marinate the Shrimp:

    - In a mixing bowl, combine the olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, salt, black pepper, and chopped cilantro.

      - Add the shrimp to the marinade, making sure they are fully coated. Cover and let it marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.

        Prepare the Slaw:

          - In a large bowl, mix together the shredded green and red cabbage, grated carrot, and chopped cilantro.

            - In a separate bowl, whisk together the Greek yogurt, lime juice, honey, salt, and pepper. Pour the dressing over the slaw mixture and toss until well combined. Set aside to let the flavors meld.

              Grill the Shrimp:

                - Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled.

                  - Thread the marinated shrimp onto skewers (if using bamboo skewers, soak them in water for 30 minutes beforehand to prevent burning).

                    - Grill the shrimp for about 2-3 minutes on each side or until they turn pink and are opaque. Remove from the grill.

                      Warm the Tortillas:
