2 ribeye steaks (about 8 oz each)

1 tablespoon olive oil

Salt and black pepper to taste

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 small red onion, diced

1 jalapeño, seeded and minced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon cumin

1 teaspoon smoked paprika

6 cups mixed greens (arugula, spinach, or your choice)

Optional: Avocado slices for topping

Prepare the Steaks: Preheat your grill to high heat. Rub the ribeye steaks with olive oil, and generously season with salt and black pepper on both sides. Allow the steaks to rest at room temperature for 15-20 minutes before grilling.
